Mango is the mainstay of Indian pickling tradition. There are different forms of pickles made with mango as the prime ingredient, but the Traditional Plain Mango Pickle is the most popular one not only among all varieties of mango pickles but among all types of Indian pickles.
In this traditional mango pickle, pieces of raw mango with stone are used as the main ingredient. No onion, garlic or ginger is added. The pieces are kept with salt for a couple of days in a dark place to activate enzymes that adds to it a kind of pro-biotic properties.
After this, the pieces are kept to be sun-dried and then mixed with different types of authentic Desi spices and herbs plus pure mustard oil that is traditionally pressed in Kolhu machine.
Again, the spice-oil mixed material is kept in Sun for couple of days to get the pickle sun-matured.
As we always do in Rasparna products, we only use pure Rock Salt- also known as Sendha Namak or Himalayan Pink Salt that has a number of health beneficial minerals as the trace elements. We never use ocean salt (Samudri Namak) that is a compound of only Sodium and chlorine.
